The soup dumpling, done right, is a small feat of engineering: a palmful of broth and pork sealed inside a wrapper thin enough to see through, folded shut with exactly eighteen pleats. Ugly Dumpling has built a fast-growing East Coast chain on that fold, and it has just planted its first Long Island flag at Smith Haven Mall, with two more locations already lined up behind it.
The Lake Grove restaurant is open now inside the mall, and the company's own locations map shows where this is headed: a Levittown restaurant is coming to 3535 Hempstead Turnpike, and a New Hyde Park location is on the way at 1532 Union Turnpike. One open, two coming, which makes this less a restaurant opening than the start of a Long Island rollout.
What an Ugly Dumpling is
The name is self-deprecating and the food is anything but. The house specialty is xiao long bao, the Shanghai-style soup dumpling, served here in six flavors and hand-folded with the eighteen-pleat technique that keeps the broth where it belongs until the first bite. Around the dumplings, the menu runs through dim sum, wok-fired noodles, rice dishes and shareable small plates, with crowd favorites that include pork chop fried rice, baby back ribs and salt and pepper popcorn chicken.
The concept takes its cues from Shanghai's street food stalls and dresses them in a modern fast-casual room. It is built for the way people actually eat at a mall: order, share everything, and be back in the stores within the hour, though some locations slow things down with a list of handcrafted cocktails.
From one Edison storefront to the East Coast
Ugly Dumpling is young for a chain this size. It was founded in Edison, New Jersey, and in roughly three years has spread to more than a dozen open locations across New York, New Jersey, Connecticut, Delaware, Maryland, Virginia and Texas, with a coming-soon list that stretches from Tampa to Wichita. The Smith Haven restaurant joins New York siblings in the Bronx and Scarsdale, and the Levittown and New Hyde Park rooms will push the New York count higher still.
Chains that grow this fast usually do it on something simple that travels well, and soup dumplings travel very well. The xiao long bao has spent the last few years becoming one of the most sought-out dishes in American food, and outside of the Island's handful of standout Chinese kitchens, it has been a dish Long Islanders mostly drove to Flushing for. A dedicated soup dumpling house inside the Island's biggest mid-Suffolk mall shortens that drive considerably.
A mall in the middle of its own glow-up
The landing spot is no accident. Smith Haven Mall is deep into a top-to-bottom renovation, with new storefronts, a reworked dining lineup and an outdoor plaza all part of the plan, and the tenant list has been getting steadily more interesting as the work progresses. A from-scratch dumpling house is exactly the kind of addition that renovation was designed to attract, and it gives mall regulars a reason to make the food court detour the point of the trip.
For the middle of the Island, it also adds a genuine option to a corridor where the sit-down choices skew heavily to the familiar. Lake Grove sits at the hinge of Smithtown, Stony Brook and the Three Village area, and the mall draws from all of them.
Levittown and New Hyde Park are next
The two Nassau locations will put the brand on two of the county's busiest commercial strips. The Levittown address sits on Hempstead Turnpike's retail run, and the New Hyde Park location lands on Union Turnpike near the Queens line, where it will be within striking distance of some of the city's best dumpling competition and clearly does not mind.
Neither Nassau opening has a posted date yet; both are listed as coming soon on the company's site. If the chain's pace elsewhere is any guide, the gap between coming soon and open tends to be measured in months, not years.
What it means for your next mall run
Smith Haven shoppers can stop reading and start eating: the Lake Grove location is open now, at the mall off Routes 347 and 25. Start with the xiao long bao, because that is the thing the eighteen pleats are for, and work outward from there. Levittown and New Hyde Park, your dumplings are being folded. The site to watch for opening dates is uglydumpling.us, where the locations page flips from coming soon to open.
