The French bistro that anchored 242 Sunrise Highway in Rockville Centre for more than a decade poured its last aperitif in late July. What comes back in its place now has everything it needs to open: a full renovation underway, a new name on the awning renderings, and as of September 3, a fresh restaurant liquor license on the books.

Aperitif Bistro is becoming Sage & Sea Coastal Kitchen & Bar, and the paperwork says the transformation is nearly done.

A license tells you when a restaurant is serious

On September 3 the New York State Liquor Authority issued a restaurant license to Sage Bistro Food Corp covering 240 to 242 Sunrise Highway, the storefront Aperitif has occupied across from the Rockville Centre LIRR corridor. The license runs through the end of June 2028.

That corporate name is the tell. Aperitif was opened by the family behind Sage Bistro, the French mainstay in Bellmore, and Sage Bistro Moderne in Woodbury, and the new entity keeps the restaurant squarely in the same hands. This is not a sale or a closing dressed up in new branding. It is a restaurant group renovating its own dining room and pointing it somewhere new.

From Paris to the coast

Aperitif ran as a classic French bistro and wine bar, the kind of room where the burger came with Roquefort and the mussels arrived in a copper pot. Sage & Sea keeps the French technique but moves the map: the owners describe the new concept as Mediterranean coastal cuisine with French influence, built around fresh seafood, premium steaks and handcrafted cocktails.

The shift is more casual, too. The owners have said the renovated room is designed to be somewhere you can drop in for a weeknight dinner rather than save for an occasion, which puts it in step with where Long Island dining has been heading all year.

Before closing, the restaurant asked its regulars to come in one more time by July 26, then handed the space to the construction crew. The owner's stated hope was a renovation of roughly two months, and the restaurant's own announcements have told followers to expect a return this September, with its signage hedging slightly wider at fall 2026. The license arriving on September 3 suggests the September version of that promise is the live one. A new website, sageandsearvc.com, is already up.

Rockville Centre's dining room keeps churning

The rebirth lands in the middle of an unusually busy season for Rockville Centre restaurants. Dodici, the village's longtime Italian standby, reopened in August under new ownership. Tete-a-Tete, a French cafe inspired by The Little Prince, started pouring espresso at 5:30 a.m. this month. Two craft studios on the strip picked up liquor licenses a day apart in August.

A village of 26,000 with its own downtown, its own train line to Penn Station and a dense restaurant row has become one of the most competitive dining markets on the south shore. Sage & Sea is a bet that the block can support one more room, made by owners who have been feeding this part of Nassau County for a long time.

What to watch for

The restaurant has not announced an exact reopening date. The things worth watching are the ones that already happened: the license is issued, the renovation is months along, and the announcements point to September. For the regulars who spent years at Aperitif's bar, the practical summary is simple. The corner is not closing. It is coming back with fish on the menu and the same family in the kitchen, and the state just signed off on the bar.
