The bagel company that sells its bagels hot, whole and by the bag is now baking in Roslyn. PopUp Bagels lists its shop at 1388 Old Northern Boulevard as open on its locations page, with hours of 7 a.m. to 2 p.m. seven days a week and online ordering already running for pickup.

It is the brand's second Long Island storefront. The first opened on Old Country Road in Garden City this fall, and the company's own map shows more of the Island on the way: a shop at 160 Walt Whitman Road in Huntington Station is listed as coming soon, while the seasonal Westhampton Beach location at 130 Main Street is marked as closing soon as the season winds down.

No sandwiches, no slicing

PopUp Bagels was founded by Adam Goldberg in Westport, Connecticut, and has grown from a local following into a company whose locations page now lists shops and popups in more than 20 states. The format in Roslyn is the same one the company uses everywhere: bagels are baked in small batches throughout the day and handed over hot and whole, with no sandwiches and no slicing. Orders pair the bagels with tubs of the company's schmears, the rotating cream cheese and butter flavors that change weekly, and the house instruction is to grip, rip and dip rather than reach for a knife.

The menu stays deliberately short. A few bagel varieties, the week's schmear lineup and not much else, which is how the company says it keeps the product consistent from shop to shop.

A bagel brand with a following

PopUp Bagels built its name on limited drops that sold out, and the company has carried that posture into its permanent shops, where fresh batches come out of the oven through the morning. The brand's Instagram account counts more than 380,000 followers, and the company's New York list now includes Times Square, Midtown East, Tribeca, Thompson Street, the Upper East Side, the Upper West Side, Union Square and Williamsburg alongside the Long Island shops.

In Roslyn, the shop lands on Old Northern Boulevard in the center of the village, near the Roslyn clock tower and the pond at Gerry Park.
