The corner of Merrick Road and Village Avenue has been one of Rockville Centre's quiet sore spots since last fall, when Chat Noir, the French bistro that held it for sixteen years, went dark without a goodbye. On Friday afternoon, the first concrete sign of what comes next surfaced: a company called The Gourmand Social LLC is preparing to open a restaurant with a full bar at 230 Merrick Road, and the name it plans to put over the door reads simply Gourmand.

Nothing is open yet, and an opening is likely months away. What the move establishes is intent, and an address, and for a village that has spent nine months wondering about that corner, both are news.

The corner Chat Noir left behind

Chat Noir opened in 2009 and spent a decade and a half as one of the village's most recognizable dining rooms, a bistro trading in classic French cooking a few steps from the heart of the Rockville Centre restaurant strip. It closed abruptly in early November, and the questions started almost immediately. Village Facebook threads filled with people asking whether the closure was permanent and trading theories about why a place that had seemed like a fixture simply stopped.

The building itself answered part of the question when the space surfaced on commercial listing sites. Friday brought more of the answer. Storefronts on that stretch of Merrick Road do not usually sit empty for long, and this is the stage at which a restaurant plan stops being a rumor: there is a named legal entity, a trading name and an exact address, and real money committed behind all three.

The trail leads to Lynbrook

The company behind the project is new, formed in mid-May of this year. But it does not lead to a mystery. State records list the contact for The Gourmand Social LLC as Sammy Silverio, at 429 Sunrise Highway in Lynbrook.

That address is Gourmology, the chef-owned kitchen, cocktail and catering spot that opened on Sunrise Highway in June of last year, and whose own website introduces its owners as Anna and Sammy. In a little over a year the Lynbrook operation has built a following on a menu that wanders comfortably from shrimp tacos to falafel to ribs, alongside a craft cocktail list and a catering arm.

Gourmology has not publicly announced a second location, and nothing has been said about a menu, an opening date or a build-out. But the shape of the thing is visible: a team that opened a cocktail-forward kitchen in Lynbrook last summer formed a new company this spring, and that company is now preparing to serve a full bar at one of the most visible restaurant corners in Rockville Centre, a few miles up the road.

What the name suggests, and what is actually known

A gourmand, in the old French sense, is someone devoted to good eating. The Gourmand Social, as a corporate name, hints at the kind of eat-and-drink gathering spot that has done well in the village's dining district, though the only name a customer would see is Gourmand. Everything past that is still taking shape, and this is the stage of a restaurant's life where plans still shift.

For now, the practical read is this. A proven kitchen from one town over appears to be behind the plan, the plan is real and fresh, and the months of build-out ahead give the village time to speculate about what Gourmand will be. Given how Rockville Centre eats, the speculating will be half the fun.
