There is a detail about Enology Wine Bar & Bistro that regulars tend to pick up late, usually from somebody else at the bar: the man who built the place fixes teeth for a living.

Dr. Dimitrios "Jimmy" Kilimitzoglou practices dentistry in Smithtown and teaches at Stony Brook, where he is an associate clinical professor. He also spent years studying wine before opening Enology on North Country Road in Saint James, in a room designed to feel like the inside of a wine barrel, with a list that reaches across roughly two dozen countries. For most of the year those two careers stay politely apart. The wine bar is the wine bar. The practice is the practice.

On Sunday, September 20, they collide on purpose.

Enology is giving over its dining room to a benefit dinner for the Suffolk County Dental Society: one seating at 5 p.m., a multi-course menu built by the kitchen with a wine chosen for each course, at $155 per person. Dr. Kilimitzoglou is leading the evening alongside Dr. Guenter Jonke, a past president of the Society. Reservations are being taken by the Society rather than by the restaurant, at 631-232-1400, and the seating is capped by the size of the room.

Not the fundraiser you are picturing

The Long Island benefit calendar is thick from September through the holidays, and most of it runs on a familiar script. A catering hall off a service road. A plated chicken that arrives at every table within ninety seconds. A silent auction along the back wall, a podium, a program that runs twenty minutes past where it should.

This is not that. A pairing dinner is closer to a seminar with very good food attached. Everyone sits down at the same time, eats the same course at the same moment, and drinks the same wine while somebody at the front of the room explains why those two things were put next to each other. For a few hours the whole room is having one conversation instead of twenty.

It also asks something of the people running it, which is the part that makes this particular night worth a note. A gala needs a host who can work a microphone. A pairing dinner needs someone who can taste out loud, in front of strangers, and be interesting about it.

What a pairing is actually doing

Most people order wine and food as two separate pleasures and hope they get along. A pairing treats them as one thing.

Acid in a wine cuts through fat on the plate, which is why a sharp white can make the fourth bite of something rich taste like the first. Tannin, the drying grip in a young red, finds protein and softens into something plush against it. A bottle that reads as merely pleasant on its own can snap into focus the second the right dish lands beside it. None of that is mystical, and none of it requires a vocabulary. It requires somebody pointing at it while it happens.

That is the actual takeaway from a night like this, and it outlives the dinner. Guests leave with a way of reading a wine list that works at the next restaurant, and the one after that.

The room it is happening in

Enology opened at 412 North Country Road, on the stretch of Route 25A that runs through Saint James, and it has built its reputation on the education side of the business as much as the drinking side. The kitchen works in small plates sourced from Long Island farms and local boats. The cellar list leans toward biodynamic, organic and family-owned producers, and the bar runs guided tasting classes through the year, most recently a Saturday-afternoon series that spends ninety minutes inside a single grape.

Saint James is a hamlet of roughly 14,000 people in the Town of Smithtown, and it is not where you would predict a wine list spanning six continents. That mismatch is most of the charm.

Who the Society is

The Suffolk County Dental Society is the professional association for dentists practicing in the county and a component of the New York State Dental Association. Its members run the kind of programs that rarely make news: continuing education, ethics oversight, and volunteer clinics that put free care in front of children who would not otherwise get it.

The evening is billed simply as a benefit dinner. Anyone who wants specifics on what the proceeds support should ask when they call, which is the same number that takes the reservation.
