Enology opened on North Country Road with an order of operations most restaurants run the other way around: the wine list came first, and the kitchen was built to support it. The by-the-glass program runs deep enough that a table can taste across a region in an evening, and the cellar list reaches six continents and twenty-three countries, weighted toward family-owned, organic, biodynamic and sustainably farmed growers.
Chef Albert Jacques cooks to that brief. The menu is small plates and shared boards, built around acidity, texture and restraint, so the food steps aside for whatever is in the glass rather than competing with it.
The room runs a Saturday afternoon class series, roughly monthly, each one built around a single grape or region and poured comparatively so the differences are on the table rather than in the description. Past subjects have included summer wines, Pinot Noir and Bordeaux. Seats are limited by the size of the room and the classes tend to sell out.
Owner Dr. Dimitrios "Jimmy" Kilimitzoglou is a Certified Specialist of Wine, and the wine bar sits alongside his dental practice in Smithtown. The bar also hosts live music, trivia nights and private events, and the full calendar is kept on the restaurant's own site.
