Egyptian Food Truck Aubergine in Plainview Celebrates One Year Anniversary

Popular Plainview-based food truck Aubergine offers authentic fare that is meant to represent both Egyptian and Eastern cultural staples, all while catering to American tastes.
Considered one of Long Island’s first dedicated Egyptian menus, Aubergine introduces a blend of Western and oriental recipes.
Their first anniversary occurred in early May, bringing with it new dishes and special offers. As reported by Newsday, the food truck is owned by two Egyptian partners, Haidy Estafanos and Sherif Ishak. Much of their recipes are supplied by Ishak’s mother.
Their varied menu offers seafood, halal, and of course plenty of Egyptian foods such as the widely-loved national dish Koshary. The eatery also has numerous specials, such as their Friday vegan days in which the eggplant-based Moussaka and other dishes take the main stage.
